I can’t believe that we are almost at the 12 week mark! That means that we are almost at the end of our first 90 day challenge. It’s just the first step – a “kick start” if you will! The program isn’t over after 90 days – in fact, it’s just beginning.
Next Friday, July 15th we will announce the winner for the first challenge. That winner will win a 7 day cruise from our sponsor, Carnival Cruise. So it is an exciting time and we can’t wait to share the results with you.
If you are thinking that it is time to take control of your life and begin your journey to living a long term healthy lifestyle, the Weight Loss Nation program may be just the thing to help get you on track.
Maybe you have some emotional issues that you are using food to deal with. I used to eat mindlessly and live to eat, rather than eating to live. Food has to be the fuel for my body, and power me to a long-term healthy lifestyle.
After next Friday, the winner will be revealed. But that doesn’t end the journey. Weight Loss Nation continues and the Facebook group will continue to be active to provide support because truly this was the first leg of the journey, not the last leg.
Another 90-day challenge will begin October 1st. We will continue to have a podcast twice a week, to help continue to support you and provide information to assist us in our healthy lifestyle.

Each Friday, we will have FREEBIE Friday, where I give you a healthy meal recipe to try, so you aren’t stuck in chicken mode! Here’s a meal to give you a jump start this week!
Broiled Halibut with Smashed Cauliflower and Cucumber and Tomato Salad
The whole meal is 245 calories!
- 1 lb of Halibut fillets – get as fresh as you can find. It will be divided into four, 4 oz fillets.
- 1/4 tsp salt
- 1/4 black pepper
- 2 T. coconut oil or olive oil
- One lemon quartered
- 2 T. minced, fresh parsley, basil and/or thyme
- Place fish on a broiler pan or skillet
- Preheat Broiler to Hi for 5 minutes
- Season fish with a dash of salt and pepper
- Brush fish with oil
- Broil fish for 10-12 minutes (until it easily flakes with a fork)
- Remove from oven and squeeze lemon over it and add the minced spices you are using
1 C. raw cauliflower
1/3 C. plain Greek Yogurt (2% fat or less)
1 C. organic vegetable stock – watch salt content (Emeril’s, Kitchen Basics, Trader Joe’s are all good brands. Emeril’s has highest salt content and Trader Joe’s Low Sodium is best!)
You can roast your garlic if you want. (Bake at 350 for 25 minutes until soft and brown)
Cook cauliflower in a sauce pan over medium heat in vegetable stock, until tender
Put in blender or food processor (Save the vegetable stock)
Blend with greek yogurt and 1/4 of the vegetable stock.
Blend until smooth
Each Cauliflower serving is Only 58 calories per serving and it is delicious!
Cucumber and Tomato Salad – 55 Calories:
3 T. rice wine vinegar
1 T. EVOO
1 tsp honey
1/2 tsp black pepper
2 medium cucumbers
4 medium tomatoes cut into wedges
1 small Vidalia onion thinly sliced
Add spices – parsley, chives, tarragon to taste
Put vinegar, honey and oil in a bowl and whisk
Slice cukes into thin rounds
Combine all ingredients and let it stand for about 30 minutes
Add fresh herbs at the end before serving
